BAKED BUFFALO CAULIFLOWER

METHOD:

In a larger bowl combine flour, a teaspoon of baking soda, salt, a teaspoon of cayenne pepper, a teaspoon of ground black pepper. Gradually add 190 ml of water. Create a batter and let it chill at least 10 minutes.

Disassemble the washed cauliflower into florets the size of one bite, cut larger pieces in half.

Preheat the oven to 210 °C and line a large baking sheet with baking paper.

Place the cauliflower in a bowl with the batter and mix thoroughly so that all the pieces are evenly coated. Drip each piece briefly and then arrange on a baking sheet at intervals.

Put in the oven and bake for 18 minutes at 210 °C.

In a small bowl, combine and whisk 3 tablespoons of olive oil, a tablespoon of soy sauce, 2 tablespoons of sweet chili sauce and a crushed clove of garlic.

Remove the cauliflower from the oven after 18 minutes. Using a brush, apply the sauce to all pieces of and bake for another 6-7 minutes at 210 °C. Serve with yogurt dip or sour cream.

NOTES: Top up your roasted cauliflower with fresh herbs, tartar sauce or tomato salsa.
