Preheat the oven to 200 °C and heat the olive oil in a frying pan. Cut the washed zucchini into thin noodles and fry in olive oil for 8-9 minutes. Then add slices of garlic, chopped chili pepper, cherry tomatoes and stir for another 2 minutes.

Mix the eggs, a pinch of salt and black pepper in a bowl and beat with a fork. Sprinkle the contents of the pan with half of the grated Parmesan cheese, add half of the chopped parsley and cover with the egg mixture.

Sprinkle with the rest of the greens, Parmesan cheese and bake on medium heat for approximately 5 minutes. When the egg layer forms firmer edges, move the pan to the heated oven and bake for 15 minutes.

Cut the frittata into portions and serve warm or cold.

NOTES: Frittata is a great way to prepare breakfast or dinner for several people at once. Use seasonal ingredients, add side dishes or serve it as a part of a sandwich with lettuce in a crispy baguette, as it tastes great even cold.
