Heat the olive oil slightly in a pan and immediately add the finely chopped garlic. Fry on a low flame for 2 minutes and add chopped chili and a pinch of freshly ground black pepper. After another minute, remove from the heat source and let the contents cool.
Remove the skin from the washed zucchini, which can later be used in soup, risotto or pesto. Cut the zucchini into thin spaghetti or grate them into spirals or strips, which should not be thicker than macaroni. Lightly season with salt, sprinkle with lemon juice, pour over the mixture from the pan and finally add freshly chopped parsley. Combine lightly and add grated cheese to the serving.
Use as a salad or a light single snack, ideal as a side dish to heavier meals.
