BLACK EYED BEAN SALAD
Boil the rinsed beans for 35-40 minutes on a moderate flame until semi-soft, drain immediately and rinse under cold water.
Chop pitted olives and mix with finely chopped pepper, cucumber, tomato and onion. Add chopped herbs, loose spices (no. pepper, sea salt, oregano) and mix everything with drained and cooled beans.
Add olive oil, wine vinegar, juice from half a lemon, mix and let it stand in the cold for at least an hour until all the flavors combine.
ingredients: 200 g black beans, 1 pc tomato, 1 pc red pepper, 1 pc cucumber, 4 tbsp olive oil, 1 pc spring onion, 6 pcs black olives, 2 tbsp wine vinegar, 1/2 pc lemon, 1 tbsp dried oregano , parsley, dill, black pepper, sea salt
