STRAWBERRY CHUTNEY w CHEESE

recipe:
Remove the leaves from the washed strawberries (set them aside), cut them and place them in a smaller pot. Add sugar, finely chopped onion, grated ginger, a pinch of salt, juice of half a lemon, chopped chili pepper, a spoonful of apple cider vinegar and also spices: whole star anise, a pinch of ground cardamom and a pinch of ground cloves. Bring everything to a boil and then let it cook slowly for 70 to 80 minutes. Stir occasionally and stir regularly during the last quarter of an hour. When the chutney thickens visibly and the strawberries are fully cooked, let it cool. If necessary, press or mix everything in blender.
Transfer to a clean, sterilized jar with a lid and store in the refrigerator.
Meanwhile, put strawberry leaves and fresh mint stems in a pot of boiling water for half a minute and then immediately plunge into a container of ice water. Dry thoroughly, transfer to a blender, add olive oil (80 ml) and blend. Strain through a thick sieve or cheesecloth, pour into a tube and put in the refrigerator.
Place the sheep’s cheese on a hot pan smeared with an oiled napkin or grill. Grill for 2-3 minutes on each side and serve immediately on strawberry chutney, drizzled with flavored oil and with green salad, nuts, fresh baguette or sourdough bread.

 

NOTES: Intense strawberry chutney combines the experience of homemade marmalade enhanced by a refined mixture of distinctive spices, and each bite ends with a pleasantly spicy flavor that you can adjust to your own taste during preparation. A fresh baguette with a piece of grilled cheese, garnished with homemade chutney and drizzled with flavored green oil will provide more than one gourmet experience. With proper storage, the chutney will last for several weeks.
