Peel the onion towards the root, but leave it on and clean it thoroughly under running water. Cut the larger onions in half so that the root part stays together, clean the garlic and put everything in the baking dish with the rosemary.

Crush mustard seeds, black pepper and salt in a mortar.

Add the dry mixture of spices to the prepared onion and cover everything with a mixture of oil, white wine and a few drops of lemon juice.

Mix thoroughly and bake for 40-45 minutes at 200 °C. After baking, pour high-quality olive oil and season with creamy balsamic.

NOTES: It’s an onion symphony with a bold taste that will convince even those who don’t look for onions very much. Serve it with lettuce, vegetables, pastries and a glass of white wine.
