TOMATOKEFTEDES

METHOD:

● Cut the tomatoes into cubes and combine with chopped onion, a handful of chopped mint and parsley. Season with a teaspoon of salt, a pinch of black pepper and set aside to chill the mixture for at least half an hour in the refrigerator.

● Add the beaten egg and crushed feta cheese into the cooled mixture. Mix flour, breadcrumbs and baking soda and all combined add it to the batter. Let stand for a while at room temperature.

● Grease a pan with a non-stick surface with a layer of olive oil and fry the kefte /pancakes. For one piece, just a tablespoon of the batter. Fry at medium intensity, 2 to 3 minutes on each side. Repeat the process until consuming the batter.

● Serve with yogurt, olives and the best side dish is some greek tzatziki.

TRY THIS: You can also omit feta cheese, the consistency of the dough will not be affected and add dill or basil. If necessary, adjust the batter before use by adding dry ingredients or add a few tablespoons of carbonated mineral water
