Combine sifted flour, salt and sugar in a food procesor. Add the chilled butter cut into cubes and mix several times while turning the maximum speed button on and off. Add cold water (9 tbsp) and very cold vodka (3 tbsp), ideally from the freezer. Again, mix at the highest speed and then form the dough manually, wrap it in foil and put it in the refrigerator for half an hour.
Fry the chopped onion in a pan with olive oil. After 3 minutes, add the sliced pepper. After another 3 minutes, season with a pinch of black pepper and fresh thyme leaves. Stir and add sliced zucchini. Cook for another 5 minutes and let cool.
When the mixture is at room temperature, combine it with grated feta, chopped scallions and breadcrumbs (2 tbsp). Place the cooled dough on a baking paper, roll it into a round shape (the size of yours baking sheet).
Transfer the rolled dough together with the paper. Brush with beaten egg and sprinkle with the rest of the breadcrumbs (2 tbsp). Place the filling in the middle, spread evenly in a circle (approx. 2-3 cm from the edges). Wrap the corners of the dough inwards of the galette, brush with an egg and sprinkle with sesame.
Bake 35 minutes at 190 °C / 374°F and then another 15 minutes at 170 °C/ 338°F in hot air/fan mode.
