CELERY SALAD

Preheat the oven to 220 °C.
Clean the celery, peel it, cut it into cubes and mix it with some olive oil (4 tablespoons), salt and dried thyme in a baking dish lined with foil. Close the foil and bake the mixture for half an hour at a temperature of 220 °C. Then open the foil and bake for another 10 minutes. Let it cool down.

Put a cleaned onion (ideal choice is a shallot), garlic, a pinch of colored pepper, juice from half a lime, pickles, yogurt and the rest of the olive oil (2 tablespoons) into the blender. Mix and pour over the baked celery.
You can add red pepper flakes, chili.
